Make this amazing Thai Green Curry from Sammys Kitchen

SAMMY'S KITCHEN | THAI GREEN CURRY WITH CHICKEN & VEGETABLES

Prep time: 15 MIN

Ingredients:

·        2 tbsp green curry paste

·        400ml coconut milk

·        500g chicken breast, slicedinto thin strips.

·        1 tbsp vegetable oil

·        2 cups mixed vegetables (carrots, bell peppers, zucchini)

·        1 cup baby spinach

·        1 tbsp fish sauce

·        1 tsp sugar (optional)

·        1 tsp lime juice

·        1-2 red chilies (optional, for garnish)

·        Steamed jasmine rice, to serve

Cook Tim: 30 MINS

Instructions

1. Prepare Ingredients: Wash and cut the chicken into strips and the vegetables into

bite-sized pieces.

2. Heat the Curry Paste: In a large pan or wok, heat vegetable oil over medium heat. Add the green curry paste and fry for 1-2 minutes until fragrant.

3. Cook the Chicken: Add the sliced chicken to the pan, stirring to coat it in the curry paste. Cook until the chicken is lightly browned.

4. Add Coconut Milk & Vegetables: Pour in the coconut milk and stir well. Bring to a simmer. Add the mixed vegetables and kaffir lime leaves, cooking for 10-15 minutes until the vegetables are tender and the chicken is cooked through.

5. Season: Stir in the fish sauce, sugar (if using), and lime juice. Adjust seasoning to 2-3 kaffir lime leaves (optional) taste. Add baby spinach and cook for 1 cup fresh Thai basil leave another minute until wilted.

6. Finish with Herbs: Remove from heat and stir in the Thai basil leaves. Garnish with sliced red chilies for extra heat.

7. Serve: Ladle the curry into bowls and serve with steamed jasmine rice on the side.
