Cooking can be a difficult skill to pick up, especially if it's your first time trying it away from home. If your looking to polish your skills or just try something new, you're in the right place.
This summer, we hosted a STUDENT COOKING masterclass for a group of our students to help them develop their skills in the kitchen. See how they took basic ingredients and turned them into a flavourful Italian-American dish with the guidance and tips from professional chefs below!

Ingredients
- 1 small chicken breast
- 1 medium potato, diced
- 2 slices proscuitto
- 4 cups fresh spinach
- 40ml white wine
- 50ml chicken stock
- 1 tbsp flour
- 25g butter
- 2 tbsp olive oil
- 1 1/2 cloves of garlic
- 2 sage leaves
- 1 tsp fresh thyme or rosemary
- Pinch of nutmeg (optional)
- Salt and pepper, to taste
Method
- Parboil the diced potatoes for 5 minutes. Drain and dry.
- Toss with 1 tsp oil, the butter, one clove of garlic, thyme or rosemary, salt and pepper.
- Roast at 200ºC for 20-25 minutes until golden and crisp.
- Meanwhile, flatten your chicken slightly and season lightly with salt and pepper.
- Place the sage leaves onto the chicken and wrap with prosciutto. Dust lightly with flour.
- Sear in 1 tbsp oil and butter, prosciutto side down, until crisp. Flip and cook until almost done.
- Add the white wine and let it reduce by half.
- Add the chicken stock and simmer until the sauce thickens and the chicken is cooked through, then baste with the sauce.
- For the spinach, heat 1 tsp of oil in a pan. When hot, add half a glove of garlic and sauté for 20 seconds.
- Add the spinach to the pan and cook for 1-2 minutes until wilted. Season with salt and a pinch of nutmeg.
- Plate the chicken with its sauce, crispy potatoes, and sautéed spinach.
